胡 蘿 蔔 蛋 糕
Carrot Cake
材料
起士奶油霜
奶油···························· 1/2 杯
奶油起士··························85g
糖粉······················ 1 又1/2 杯
香草精·························1 小匙
麵糊
雞蛋·······························3 個
細砂糖··················· 1 又1/4 杯
蔬菜油····························1 杯
中筋麵粉················ 1 又1/2 杯
肉桂粉·························1 大匙
泡打粉····························1 匙
小蘇打粉······················1 小匙
鹽······························· 1/4 匙
胡蘿蔔絲················ 1 又1/2 杯
鳳梨碎························· 1/2 杯
核桃(或是胡桃)·········· 1/2 杯
葡萄乾························· 1/2 杯
裝飾
核桃······························ 適量
作法
1 先製作起士奶油霜。奶油置於室溫下軟化,與奶油起士、糖粉、香草精放入攪拌盆以打蛋器攪打均勻。
2 製作麵糊。雞蛋與細砂糖放入乾淨的攪拌盆以打蛋器進行攪打。
3 攪打成蓬鬆泛白的蛋糊,倒入蔬菜油以橡皮刮刀混拌均勻。
4 加入已過篩的中筋麵粉、肉桂粉、泡打粉、小蘇打粉、鹽混拌均勻。
5拌入胡蘿蔔絲、鳳梨碎。
6 加入核桃與葡萄乾拌勻,平均倒入抹有奶油的2個模具,送入已預熱到180℃的烤箱,烤30分鐘。
7取出蛋糕,待冷卻後即脫模。
8 取一片蛋糕抹上起士奶油霜,蓋上另一片蛋糕,再抹上起士奶油霜,最後擺上核桃裝飾。
